What most Vietnam travel package get wrong is assuming people want efficiency when a lot of the magic in Vietnam comes from inefficiency and randomness. The best meals I've had there were accidental, same with the best conversations, and structured tours don't really allow for that. Vietnam trip packages that build in unstructured time or purposely leave gaps in the schedule tend to feel less suffocating but they're harder to sell because they don't look impressive on paper. You can't package serendipity but trying to eliminate it doesn't work either.
